Hi all, šŸ‘‹

I’m all sorted for Christmas dinner (which will be rolled out again on Boxing Day) but looking for simple low effort ideas for the other lazy days around Christmas? We’ll definitely do a cheeseboard/pate type evening but what else do you all have in that ā€˜lull’ between Xmas and New Years? Thanks in advance! X

Soup made with left over ham
Jacket potatoes
Toasted sandwiches with left over meats and cheeses
Pizza with leftover turkey on!

Turkey bahn mi
Turkey hoisin pancakes (exactly like crispy duck but with fried leftover turkey)
Turkey curry - with fresh herbs and spices, dried spices, fresh tomatoes and coconut milk, with homemade flatbreads
Baked tomato and mozzarella Gnocchi - will throw in some sausage meat if any stuffing or pigs in blankets leftover

I like it to be a bit lighter.
Tuna steaks with garlicky stir fried broccoli
Stuffed mushrooms
Jacket sweet potatoes with homemade coleslaw
Mango chutney topped cod fillets
Maybe a fritata

We are having chicken and chorizo tray ale on 27th and beef stroganoff on the 28th, curry on 29th, haven’t planned any further than that! Maybe a big veg frittata or simple tomato pasta

Turkey & bacon pie on the 27th for us. Doing a shop on the 28th so haven't planned any further.

All fab suggestions, thank you! I agree with wanting things a bit lighter @Atleastitsnotmonday - but can’t bring myself as far as salads so all the above suggestions are right on the money as something a little different!! Chicken and chorizo day tray ale sounds intriguing?! Would love the recipe @freebuttonbee?

I prefer more veggies on the days in between. I am ordering some of the Waitrose prepared pouches with veg etc to steam and will do with good sausages/fish/chicken. I will make a vat of bol though to keep in freezer just in case....

Chicken and chorizo tray bake

Chop up chicken breast or thighs into large pieces. Chop up chorizo (I prefer the cooking stuff to the cured stuff for this). Add 2-3 chopped red peppers, 2-3 onions (red in large wedges) and a Tim of cherry tomatoes with their juice. Add 5-6 whole cloves of garlic and liberal salt, pepper and olive oil. Roast in the oven until it looks tasty (30 mi a or so?). Serve with rice/couscous/pitta and hummus and whatever else you fancy
