I usually make a lot of different fried rice dishes and biryani dishes.
Looking for ideas for spicy Mexican rice dishes and other dishes which are fairy quick yet tasty.

I made this tuna avocado rice bowl yesterday, with tinned tuna instead of sushi tuna! It was light but filling and felt healthy!

I do Mexican chicken but it is not quick.
Chop and brown 500 gm chicken. Put aside.
Brown a chopped onion in oil, add 1 cup white rice an stir until rice turns white (changes colour).
Add 500 mls chicken stock and a jar of taco sauce and chicken.
Bring to boil, then simmer until nearly all liquid is gone and rice is cooked.
Add frozen peas and stir, cook until liquid is gone (2-3 minutes).
Serve with tortilla
