I've got four lovely big mushrooms. What shall I do with them?

I just pile grated cheese and garlic (or spring onion) on top, and then roast in the oven.

remove and chop stalks. mix stalks with breadcrumbs, grated cheese and garlic stuff into mushrooms and bake. Can't remember temp or how long for, at a guess med oven 20 mins ish?

Stuff them with what? Not meat, fish, dairy or egg...

Sautee some red onions and garlic and put on top. Wrap in foil and roast in oven. I would normally put some strong cheddar cheese on top, but guess that's not an option. What about a mild goat's cheese on top?

you could make a risotto using the mushroom stalks and then put the rice in them.

not sure if it would work but maybe even fry the mushrooms in a bit of garlic first to make them softer.

No, not goats cheese either. Would be fine without it though.
Like the risotto idea too.

Fried onions on top would be fine, I think. You want some fat in there, of some sort.
