I've been tasked with making the xmas dessert this year and I am not the best cook! Anyone have any easy recipes for a nice, light dessert for after xmas dinner?

Easy Trifle.

  • Put a Tin of fruit cocktail and slices of vanilla sponge (shop bought) in
your trifle dish.
  • Pour over Jelly and let set (the hartley kind you buy and dissolve in
water)
  • Layer of custard (shop bought carton)
  • Squirty cream on top and sprinkle on 100s and 1000s

Banoffee Pie

  • Buy an already made desert pastry base or make one using crushed
digestives and melted butter
  • Pour over a tin of Nestle's Carnation Caramel
  • Layer of sliced bananas
  • Squirty cream on top and grate on some chocolate for decoration

Not especially light but I'm making this maverickbaking.com/no-bake-gingerbread-cheesecake/

Big trifle dish
Layer of those trifle sponge finger biscuit things
Layer of lemon curd
Repeat x3
Layer of whipped cream
Sprinkle of flaked almonds
Put in fridge for an hour or a day and it turns itself into the most gooey lemon thing ever.

I've finally decided on making a passionfruit cheesecake for this Christmas. That's pretty easy.

Lidl have some lovely puds in the deluxe range

Lemon posset as has been already mentioned. So easy!!!

I’ve been wondering myself what to make and the chocolate mousse cake looks perfect! We don’t have a microwave which means Christmas pudding is a PITA to heat.

I would also recommend Nigella’s baileys tiramisu - really easy to make, tastes amazing and everybody loves it. Will have to give it a miss though as it’s not kid friendly!

RockingMyFiftiesNot · 16/12/2018 00:07

Is this in addition to or instead of Christmas pudding?

HoldMeCloserTonyDanza · 16/12/2018 00:15

I do trifle but if you’re aren’t a confident cook I wouldn’t push myself with dessert when you’ve the big meal to do too.

My sister makes a chocolate biscuit cake shaped like a Christmas pudding that is yum, can be made in advance, and is pretty impossible to mess up.

dreamingofsun · 16/12/2018 10:26

chloe - do you have a slow cooker? I bung mine in there and forget about it....with a bit of boiling water

chloechloe · 16/12/2018 13:25

dreaming No I don’t have a slow cooker but thanks for the tip!

I’ve tried to cook it in previous years on the hob, but it’s a PITA as you have to cook it for hours and make sure it doesn’t boil dry.

Someone recommended chocolate orange trifle on here the other day which I think weight try ... not sure it counts as light though... www.sainsburysmagazine.co.uk/recipes/christmas/terrys-chocolate-orange-trifle
