Flipping lemon tart drama

I agreed to make a lemon tart for someone. It's an easy recipe I usually do well but all of my pastry attempts have gone wrong. So I've got a homemade curd ready to use which tastes fine, but no pastry. I want to give it another go tomorrow. Can I leave the curd in the fridge? Will it set? (It has double cream in it so am assuming it will?!). Argh! Didn't even want to make this thing, only doing it as I was asked to but it's the worst time as DD (14 months) is being so clingy.

And if the curd does set, can I then reheat it on a low setting, or will that give everyone food poisoning?!

Yes, it will be fine tomorrow. If it's set reheat it over a low heat until liquid, it's not going to kill anyone in a

day!

Ooh. Can you please share the recipe for homemade lemon curd.

Sorry for late replies! I use this recipe - it's not really a curd, more of a pie filling. It's super easy and always works - i just always use a ready made pastry crust which I didn't do this time 🙄

(I don't love the Londoner but this recipe that she took from another blog is v good)
