Tell me your hummus tips. I never seem to be able to make mine as good as store bought. I’d like to try to make with dried beans rather than a can (I know this is more effort but it’s a lot cheaper!) Also, have you frozen hummus with any success???

My tip is to blitz the tahini with lemon juice before you add the chickpeas. I don't know why it makes a difference but it does.

Also once it is all blitzed together add a bit of water to get to the right texture. If you check the ingredients of store bought you will find water.

Yes, it does freeze. You might need to cheer it up with some olive oil once it has defrosted though.
I have a friend who swears that PEELING THE CHICKPEAS makes all the difference. Never going to try that one.
But fresh chickpeas do really improve the taste and texture, I think.
What really makes a difference is how much sesoning or different flavours you add. My standard hummus always has harissa in it, loads of tahini and lemon juice, but not too much garlic.
I then add either roasted sweet potato, butternut squash, carrot and cumin, or red onion. Just keep tasting as you go, it needs to really zing.
God, I love hummus...

And I’ll second what Frenchfancy said about the water. If you use tinned chickpeas, use a bit of the canning water.

Ottolenghi's recipe is the most simple and by far the best one I've tried. Doesn't need any extra flavours adding IMHO
