Strawberries - tried and tested Granita and Ice Cream recipes - PLEASE

Yesterday I acquired a glut of overripe strawberries. They are now 1 ltr of finely sieved strawberry mush.

I have an ice cream maker.

I would like to use some of the mush to make granita, but all the recipes I can find online have masses of sugar and and water added. I don't think the s/b need any sugar - can I just make the mush into granita ?

I also acquired a couple of pots of jersey double cream and wondered if just combining these with the strawberry mush would also work as an ice cream.

My favourite ice cream recipe is single cream, condensed milk and creme fraiche - a perfect base for all sorts of flavours without having to make a custard - not my strong point.

Any words of wisdom would be gratefully received. TIA

This ice cream is very frequently requested by our friends so I think it must be quite good:

1 lb strawberries
juice half lemon or to taste
5.5 - 7 oz sieved icing sugar, to taste
10 fl oz double cream

puree strawberries (you already did that bit), add lemon juice and sugar. Stir in the cream.

Freeze churn until ready.

oh for a foodie variation you can add 1 - 2 tsp of freshly ground black pepper before you add the cream, but we have never tried that

About a litre, dp says

it really does make a delicious, quite intensely strawberry flavoured ice cream. I hope you like it.

dh here says no way - 1ltr of water would weigh 2.2lbs. On that calculation, 1lb of s/b should be just under 1/2 a ltr.

Personally, I think I hulled far more than 2lbs of strawberries

we really like it

I have a friend who had dreadful hyper-emesis and she could hardly eat anything at all, etc etc

anyway our ice cream cured her
