Vegetarian / vegan jacket potato fillings?

I have guests this weekend, some of whom are vegetarian.

DS is going through a 'baked potato' phase and with working all day Saturday, I haven't got the emotional energy to argue about his food foibles - he's four.

So I need veggie toppers for jacket potatoes, and I'm out of ideas.

Can anyone help me?

I love pesto and feta in baked potatoes.

Chickpeas are great-especially with sweet potatoes, spinach/rocket and a bit of feta and tahini mixed with lemon juice or green pesto.

An Australian favourite is alfalfa, sourceeam, diced pineapple and beetroot.

Baked beans and cheese is great if you are lazy and your guests are fussy.

You could put pretty much anything in there.

Cheese and beans is the classic. Cheese on top of the beans so it goes melty.

Otherwise, veggie chilli, veggie curry, some kind of stew probably. Warm and stodgy is key.

We make jacket potato Shepard’s pie. Our filling is with lentils, mushrooms, carrots and parsnips, veg stock, tomato paste and veggie worstershire sauce.

Cook your jackets, cut the top off and scoop out the potato. Fill with shepherds pie mix. Mix your potato with milk and butter, pop on top, grate veggie cheese and back in the oven for 15 mins.

Quiche and salads on the side, plain jackets.
Black bean, sweetcorn, and red pepper salsa, ingredients all from tins and jars if you CBA.
Falafels.
Carrot, cucumber, pepper, with hummus, guacamole, dips.

In a frying pan and olive oil cook halved cherry tomatoes (about a punnet), the add black beans (half a tin) cook for a while - 5 mins- then add a bit of chilli and a splash of vinegar cook till the tomatoes are soft. Put in potato and add guacamole. Sour cream if vegetarian. I cooked this from a deliciously Ella recipe ages ago, probably slightly difference if you look up the original recipe!

Garlic mushrooms, maybe with sour cream and/or cheese
Brie and cranberry sauce
Hummus
Linda McCartney sausages with any of the above
Falafel, with minty yoghurt (just stir mint sauce into plain yoghurt)

Tin of chickpeas, olive oil, salt, pepper, squirt of lime or lemon juice, bit of paprika, squirt of sriracha, mix it up, roast for fifteen minutes

Make vegan chilli for the grown ups, have optional cheese/vegan cheese/guac on the side

‘Curried’ baked beans. Basically onions fried off with garlic, a can of beans, some chilli and / or mustard if you have it and a pinch of any random curry powder you have in the house. Staple of Indian households all over the UK lol
