Veggie stuffing for Christmas

Last year Waitrose had some nice "special" veggie stuffing for Christmas dinner - this year there's very little.

Any recommendations for non-meat festive stuffing so my Christmas dinner isn't limited to nut roast and veg?

Fry onions in loads of butter add bread crumbs garlic salt pepper. Add in a flavour or 2 . I like apricots, chestnuts, dates, apple, season as you fancy. Bind with an egg.

I’d second Unescorted’s recipe, plus I always add some fresh chopped up sage.

I do a corn bread sage and butternut squash stuffing

I’ve used the ones linked above from sainsbury’s - the sage and onion one was great, didn’t love the cranberry one though.
