Normally buy own brands but thinking of getting some of this on offer with an online shop. How long after purchase do the expiry dates on it tend to be?

Months ime. Why? I bought a couple of large packs as they were on offer and stuck one in the freezer.

Thanks.
Just working out how much to get.
Have never frozen cheese before. Do you have to do anything with it, eg put it in a separate container, or just freeze it in its original packaging?

I just put it in the freezer. I think I even grated some of it frozen (desperation as we had no other cheese and I was cooking).

Cheese keeps for ages - although not in our house, DS and DH are cheese fiends.

I bought a huge block of a mature cheddar from Costco and had to portion it up as it was too big to handle. I wrapped it in cling and it still looks okay four weeks down the line.

Cheese matures in a dark, cool place. It's designed to last a long time - but if you keep chopping into it with a knife that's already been used then I guess that will introduce other bacteria which could cause it to spoil.

It is a hard cheese so if there is a bit of mould just cut it off it can't penetrate the surface
