Leftover Roast Potatoes and Carrot

What to do with it? I love cold roasties but hoping for a meal idea. Obviously could just roast some chicken breasts and have a second roast but I was trying to think of something more creative.

Bubble and squeak. Chop all your leftover veg into smallish cubes and fry, along with some extra green veg (cabbage is my choice) till golden and crusty. Serve with grilled sausages or some baked beans. Yum!

Or roughly mash and use as a savoury "crumble" topping for a pie. You could use the chicken breasts you've mentioned above to make a pie filling and then bake in the oven with the crushed roast veg on top to finish off.

Or get a sheet of puff pastry rolled out and mix your chopped veg with some gravy and maybe a handful of peas and a chopped chicken breast (pre-cook). Use to make bridies or pastys to bake in the oven.

I should add that the bubble and squeak is amazing with fried eggs.....
