VERY good sponge cake recipe

I am looking for a reliably good sponge cake recipe to make for my mother's birthday. Needs to be a good size and not dry. I would be grateful for any recommendations.

Weigh your eggs and then use equal amounts of sugar, butter and self raising flower. Have all the ingredients at room temperature and beat the butter and sugar until it is really fluffy before adding the eggs and flour. Works every time.

I prefer the taste of butter, but if you use margarine instead then cakes tend to be spongier, which a lot of people prefer.

80z bero self raising
Four good quality large free range eggs
8oz unsalted room temp butter NOT margarine
7oz caster sugar

I drop an ounce of sugar and the. Add some vanilla extract. Good stuff.
This makes two decent 20cm sandwich tins of lovely sponge cake.

The flour, butter instead of margarine and good tins plus ideally not a fan oven also help
