Menu planning for the week ahead and id like some inspiration. What are your go to meals that are quick? Under 30 mins deffo, pref under 20.

Im pretty savvy cooking wise, and have a decent store cupboard so happy to try any and all quick recommendations.

Gammon steaks with eggs and chips, gnocci with chicken and broccoli (cook, lob together with a sauce of your choice, I often use leftover chicken), jacket potatoes with quiche and salad, pasta bake.

Omelette with whatever you have in the fridge, a salad and bread next to it.
Half a bag of frozen mixed vegetables over a sauteed onion&garlic, chilly flakes, ginger, noodles (or rice, in which case I add 2 beaten eggs as well),soy sauce, it’s one of the best meals out there.

Soup with fresh bread (or croutons), last time I made carrot and lentil, it’s dead easy to make.

It might be handy to keep a bag of frozen mixed veg in the freezer. Just add it to a tin of curry sauce or passata or cheese sauce. You could add meat if you wanted but it would be a meal in 20mins.

Salmon fillets topped with Cajun seasoning and baked in the oven for 15/20 mins, start jackets in microwave then finish off for 10 mins in oven with the salmon and serve with some mange tout or sugar snap peas. 20 mins and it’s on the table.

@sashh I love the sound of the coconut milk & rice recipe, how much rice do you use for a reg can of coconut milk please?

I bit difficult to say as I use the rice cooker and just fill to the 'min'. You would use the same amount of liquid as you would water for plain rice so 2 parts rice, 3 parts coconut milk (with added water).
