Gluten free bread for stuffing and bread sauce

Can anyone recommend one? The only time I tried GF bread it had the taste and texture of mashed potato!

The problem is that gluten free bread is often made with potato/rice flour so it doesn't act in the same way as normal bread when you make those kinds of things with it.

I would be tempted to try the Wharburtons gf tiger loaf left to go a bit stale for the stuffing. Not sure about the bread sauce, as you say, it's likely to go a bit potatoey.

It looks like some of the supermarkets do gluten free packet bread sauce mixes if you get desperate - no idea what they taste like though.

I usually use gf oats for stuffing rather than bread. Bread sauce isn’t pur thing.

There are some Tesco soft rolls with bamboo fibre that stand up pretty well to being made into french bread and bread/butter pudding, might be worth a shot. But you’d need to do a practice.

If the practice doesn’t work, I’d try to rethink it. Straight substituting often doesn’t work with gf stuff.

@RtHonLady oats, unless marked as gluten free, aren't gluten free.

I suspect nearly all of them will have some form of potato in them somewhere.

I've just looked at the four different GF bread products currently in my kitchen and every single one of them has either rice or potato flour listed as one of the first two ingredients and the other somewhere in the ingredients. Although interestingly tapioca flour seems to be used as a main ingredient in a few if them too. I suppose you could go and look at labels in the free from aisle and see which ones aren't too potato heavy?

If you are making it specially for one person I would check if they are overly bothered about it. The coeliacs in my family probably would rather everyone else ate normal bread sauce and they just missed out rather than everyone suffering a bad gluten free substitute.

The stuffing I reckon is doable though as long as you don't overwork it.

I have never made stuffing with it but the Warburton's GF sourdough cob is one of the nicest GF breads I've tried. It's made mostly with starchy flours and that must be how they get the texture. I prefer to avoid breads made with mostly rice flour (which most of them are) as to me it has an unpleasant gritty texture.

Could you do a meaty stuffing? My mum used to make one with sausage meat. I don't think there were any breadcrumbs in it.

As a GF person I am generally not bothered about missing out on extras like bread sauce. I'd be disappointed if there was no gravy though - easy to thicken it with cornflour.

I would do:

GF sausage meat stuffing with nuts and some GF oats.

I think I saw a GF bread sauce mix in Tesco. I'd be tempted to use that as my base (but add loads of cream and cloves).

And you didn't ask about this, but I swear by xanthan gum for thickening gravy but I know not everyone likes that texture.

Cheating a bit but m and s used to do a ready made fresh gluten free bread sauce. Got rave reviews (I haven't tried it as I don't like it!)

I buy Asda extra special stuffing (fresh or frozen this year) it is gluten free but gluten free by accident iyswim. The one I've bought this year is pork with sage and caramelised onion.

I also buy my pigs from there.

Lots of the fresh m and s stuffing is gf too.

Last week I accidentally bought Crimbles bread crumbs from Sainsbury’s and they are gluten free. Tasted good on a leek gratin and in sausage stuffing

Go American and try cornbread stuffing ( they also call it dressing).
