Is it OK to make coleslaw the day before?

As I am short of time on the day?

Cabbage, red onion and carrots......it's been decades since I made it! Add mayo and that's it isn't it?

Bit of lemon juice and vinegar. I think it tastes better on the 2nd day. Like soup.

You can prepare the veg and the dressing separately then combine them on the day so it's 'fresh'.

I think it improves the next day too! Mine stays edible for 4-5 days.

Big mistake having surgery before DD's 21st birthday party - I thought 6 weeks would be plenty!!

I would prep veg and mix it on the day as mine always seems to go more watery on the second day. Also if using red cabbage, it might go a funny colour (though I don't use lemon juice, maybe that would help).

Does it need to be stored in water (& drained before I add mayo)

I wouldn't. I think even if the top dries a bit it will soon perk up, or be unnoticeable in the mayo. Have a great party.
