Left over chicken - what to make

I've got left over roast chicken and am unsure what to make tomorrow.

I was planning risotto but have no risotto rice, only a microwave rice pouch. Can I use that in any way?

Any other suggestions? I have potatoes, carrots, a jar of pasta sauce, milk, I think tinned tomatoes, chicken gravy granules, gluten free flour, butter, eggs, bacon, peas, gluten free bread.

I can't shop until Friday.

Alternatively can I freeze cooked chicken, because I could make jacket potatoes with tuna mayo instead?

You could make a really nice egg fried rice. Do you have soya sauce?

If you have onions include them in this first part...chop them thin with your carrots and then throw in your chicken thinly sliced too. If it doesn't look like enough then add bacon. When it all looks nice and brown remove everything and make a little omelette from your egg. Break it up in the pan, then add your microwave rice sachet (I assume already soft rice, if not cook it first) and then add the original ingredients back in to the pan with the egg and the rice. Throw in some peas at the end, they should cook in that pan quickly. Add soy sauce if you have it, or chilli sauce!

A pie with the chicken, bacon and peas in a white sauce, and make a pastry.

Chicken and bacon pie with potatoes sliced very thin on top, instead of pastry.

Gently fry, onions, carrots, celery with a little garlic and thyme until softened. Then add some flour, cook for a minute or two. Add chicken. Add stock.
Top with very thinly sliced potatoes. First layer add a little grated cheese. Then top with another layer. And some more cheese.

Or something like that.

Left over chicken can also be added to a very quick chicken noodle soup.

Risotto. (Although you don't have rice)

Chicken pasta dish? Creamy or tomato.

I did a chicken & rice dish last night with leftover chicken and a pouch a microwave rice.

I fried up some onion, garlic & peppers, added frozen peas & sweetcorn, added the chicken & some chicken stock & wholegrain mustard & a bit of thyme. It was lovely.

I have more leftover chicken so I'm planning on gnocchi with spinach and some leftover pumpkin puree and cream cheese as a sauce.

Chicken in white sauce served with the sachet of rice. (You could use the jar of pasta sauce)

Chicken Alfredo with the pasta.

Chicken in a tomato sauce with pasta.
