I’ve just taken the pudding off the hob after a loooong steam and it looks like this: still visible suet. Have I fucked it or will it be ok after the second steam on the day?

Are you sure it's suet and not chopped apple or some other fruit like dried orange peel? After that length of time suet would have melted.
