I need some inspiration for what bakes I can do in a loaf tin that would be suitable for my dc to take to school for snack. I currently only make banana bread and lemon and poppy seed cake - anyone have any good recipes to share? Thanks!

Mary Berry has an amazing recipe for Bara Brith. I make it all the time. It also freezes:

175g currants
175g sultanas (although I use all sultanas as I prefer it. You could add in any other dried fruit I guess to vary it)
225g light muscavado sugar
300ml hot strong tea
275g self raising flour
1 large egg, beaten

Soak the fruit & sugar overnight in the hot tea.
Mix in the flour and egg the next day.
Bake in a 2lb loaf tin for about 1h 30mins at 150 degrees.
Cool in the tin.

My DC and DH devour it!
