Rolled lamb breast

Has anyone got a fab recipe? I bought a piece yesterday and can’t decide what to do with it. All the recipes I have found online leave me cold.

Ooooh I lovve rolled lamb breast I always stuff it with normal sage and onion stuffing mix made a bit more wet than normal but chop lots of dried apricots into it. Cook for a good long while

I am not helped by the fact I don’t actually like lamb much, bought it for DD who does ... then when I got home I read it is the equivalent cut of belly pork - I hate fat!
