I'm doing a buffet for 14 at Christmas. I love a nice buffet but I would something special this year.

Poached salmon, and a quality pate. I love a spicy option on a buffet, samosas, spring rolls, chicken satay with a peanut and sweet chilli dip. Beef or chicken curry in a slow cooker, or chilli con carne. Baked ham with a marmalade glaze, a cheese board, homemade sausage rolls and quiche and of course a pork pie. Selection of salads, coleslaw, potato salad, crisps, nuts, olives and pickles. I’ve also cooked a Lasagne for a buffet and served with tear and share garlic bread and ceasar salad,you can make the Lasagne ahead and freeze, same for the curry and chilli.

I don't like lots of faff and lots of things mixed together on a plate.
I'd just like nice bread, nice cheese, grapes, celery, some coleslaw and crisps and some veggie sausage rolls. Maybe some pakora for a bit of spice. And green salad.

Loaded potatoes - bake potatoes (8), slice in half, scoop out potato into a bowl. Add cooked chopped bacon (1 pk) and mushroom (1/2 pack). Add in a pack of garlic soft cheese. Mix well. Refill potato skins and cook for about 15mins. Add cheese on top if you like. Serve with creme fraiche or sour cream. Delish.

I have these with a plain meat like cooker ham, turkey or salmon.
