chicken in creamy leeks

steam leeks in the microwave, stir into cream with a little butter flour salt pepper and stir over a hob, adding milk!

Be really nice with some fried chorizo as well. With pasta I think.

Id chop up the chicken breasts and leeks and fry off with some chopped chorizo. Add cream and serve with pasta.

Cappuccino · 20/06/2007 10:07

if you had some chorizo you would. Weren't you listening?

CountessDracula · 20/06/2007 10:08

do you have any tinned canellini beans? I guess you could leave the beans out but they do go well:

cube chicken & brown, fry sliced leeks until softened. Drain beans and squish a bit with your hands. Put everything in casserole dish, pour cream over and cook in medium oven for an hour or so. V. nice with mashed potatoes.

ooo....sounds lovely thanks!

tried the cannelini beans with it...2 youngest scoffed the lot, I loved it but eldest ds took one mouthful, gagged and refused to eat any more....grrrr he is a fussy sod, just like his dad....will try without the beans next time and see what he does! Thanks everyone
