Failsafe cookie recipe?

After yet another disaster 🙁 does anyone have any tips and tricks or failsafe recipes?

My baking skills are really basic. Made these recently, turned out really nice: www.geniuskitchen.com/recipe/oatmeal-chocolate-chip-cookies-no-eggs-3954

I used a tablespoon to measure out the cookies and baked them for exactly 11 minutes. They will look under-cooked but do harden up on cooling. Also they are really sweet, so I would suggest cutting down on the sugar.

My failsafe chewy Millies Cookies type recipe:

125g butter / stork
100g light brown soft sugar
125g caster sugar
1 egg lightly beaten
1 tsp vanilla essence
225g self raising flour
200g chocolate chips (I usually just chop up chocolate bars, it's nice to vary the flavour sometimes)

Preheat oven to 180.
Cream butter and sugars together.
Add the egg and vanilla essence, beat in until mixture is creamy
Add flour and mix
Add the chocolate chips
Shape into loose balls & put on baking tray
Bake 5 minutes, then flatten the cookies with the back of a spoon
Bake for 3 minutes more
Cool on a rack

They will look massively undercooked when you take them out, but don't be tempted to bake them any more, otherwise they will be rock hard when they are cooled.
