Easy fish recipes

Need some easy fish recipes. Either v quick with a quick side or something more slow cooked.

What I often do is something like chicken tray bake b3cause I can go off and do something else while it’s cooking. I find fish more if s pain as yo7 hav3 to watch it!

I buy a mixed fish pack from supermarket, and steam it along with chopped carrots, peas and finely chopped cauli and broccoli and make a cheese sauce. When all cooked I mix it all together and serve with mash.

Or salmon in the oven for 20 ish minutes with sweet chilli sauce (I do fry it skin side down to crisp it up at the end) and serve with either stir fry and noodles or egg fried rice.

Book take no time at all and are clean plates all round Smile

Stick salmon fillets with a slice of lime in the oven for 15-20 minutes. Serve with noodles and stir fried veg in chili sauce.

Or use baking parchment to create parcels each containing a salmon fillet with finely sliced veg (leeks, carrots, green beans, baby corn, peppers) and a slice of lemon. Serve with new potatoes.

My go to super easy fish recipe is; mix together natural yoghurt with curry paste of choice and use to marinate cod fillets ( I usually do first thing and leave fish in mixture, in fridge until until dinner). Then remove fish and bake on tray in oven removing after about 10 mins, topping with mango chutney and finishing off under the grill.
Another super quick is tuna steaks literally a couple of minutes each side in a griddle pan, use for nicois in summer or with garlicky beans and broccoli in winter.

I put butter, frozen chopped garlic and frozen parsley into the microwave to melt and then artfully drizzled it over salmon and asparagus which I then wrapped in paper. Seems like a right palava but it only took a second to throw together. I put it in the oven for about 20 minutes. Served with jacket potato’s.

Nice change from my usual wrap in foil and over cook the fish to new levels.

Salmon fillet, Squeez a lemon or lime over, spread with pesto sauce and sprinkle with breadcrumbs and parmesan. Grill or oven bake til done. Serve with new pots and peas or basmati rice mixed with toasted pine nuts, grated parmesan and peas. Or salad.

Salmon in foil. Don't grease the foil then the skin stays stuck to the goil (hate the skin).
