Forgot to add, I've got frozen cubed butternut squash from Aldi which is just roasted from frozen so no prep needed-genius!

I fry onions till softened, add some sliced garlic then chuck in the butternut squash. Season. Fry for 10 or so minutes until soft then pour on a litre or so of hot stock (chicken, veg) and cook. I then add a few large spoons fulls of peanut butter and a good amount of chilli flakes, and blitz with a hand blender. Serve with a dollop of sour cream, a sprinkle of salt flakes, and some dried coriander leaf.

For mine, I fry onion and garlic in a little oil till softened. Add the squash, a couple of tsp of chilli powder (mild or hot, your choice) and some smoked paprika, and stir in the oil till all coated. Pour over hot stock (veg or chicken, usually) and throw in a couple of handfuls of red lentils. Blend when it's cooked (30 mins or so).

I've also used curry spices instead of the chilli blend, and they work amazingly well too. I'd be hard pushed to decide which I prefer.

Thank you for the info, plan to use medium curry powder I think and maybe a bit of ginger or paprika

Made some last night and it was lovely. 2 bags of cubed bns, roasted, Ann onions and garlic softened then added 2 tsp of curry powder and stock and blended. Added smoked paprika too. Thanks all.

Sounds yum. I make this one/ similar but with coconut milk too
