help me to plan this week's meals. I am trying to lose weight so want to reduce carbs (I know this works). I am also on a budget so don't want to spend much but have quite a lot in the freezer, especially chicken and sausages. Happy to cook all from scratch. DH will eat anything, Teen DS hates vegetables with a passion and is a huge eater so needs to be filled up. DD is vegetarian and will sort herself out but I'm sick of having several different meals on the go at once!
I am at work all week and will have hard boiled eggs, yoghurt with berries, home made soup and fruit during the day but it's the evenings.Pasta dishes will suit ds but not good for low carbing. Veggie dishes will suit dd but not ds. DH will cook but only one pot type things or mince.
Am so tired of all this.

Lentil stew. Serve with baked potatoes for everyone but yourself, and with sausages for every but your DD.
Chickpea tagine. Serve with couscous for everyone but yourself and easy to add some grilled chicken pieces or lamb meatballs.

I make a whole cauliflower into rice each week, and just use that to replace the carbs in any family meal. Every meal we have starts as a vegetarian meal, and I just add some meat at the end for those who partake.

Example. Butternut squash, chickpea and spinach curry. Serve the vegetarians, add some chicken left over from Sunday roast, serve with rice, naan or cauliflower rice.

I also made lentil bolognese and meat bolognese with spaghetti, and had mine with roasted field mushrooms.
