Trying to introduce some meat free meals for the family, can you please tell me your favourites for some inspiration

Chickpeas served with basmatix rice and rocket salad on top - all in a buddha bowl.

Half-brown some onions, add garlic, spices (eg cumin, paprika, chilli, curry powder, your choice, at asian grocers you can buy “chana masala” spice mix, add a touch of water. When it evaporates, add chickpeas (tinned), red peppers chopped, a tin of passata. Cook for 10min. If you like it creamier add two spoons of yoghurt or cream once the pot has cooled a bit. Cook for 2 mins on low heat. Serve with salady stuff or spring onions on top.
(Adjust spices to your own taste)

Linguine with chestnut mushrooms, sage and toasted pine nuts and hazelnuts, in a lemony stock.

Toasted wholemeal baps filled with grilled mushroom slices, little gem lettuce, grilled pepper, sliced tomato, gherkins and basil mayo (mix fresh basil with mayonnaise and a splash of white wine vinegar). Serve with sweet potato chips.

Bean chilli (could add a bag of Quorn)

Any veggie curry or dahl.

Mediterranean flatbread pizzas: dry fry a flattened dough of Greek yogurt, plain flour and cumin seeds. Top with olive oil, pine nuts, feta, olives, baby tomatoes, then grill. Add more olive oil and fresh coriander. Serve with babaganoush and tzatziki.

There is a roasted veg and chickpea stew on deliciouslyella.com that is really tasty.
And dahl I love dahl, so many different ways to make it.

Also made a tomato, sweet potato and carrot pasta sauce that my veg fearing DS liked, he did add cheese though so not vegan.

We have veggie/vegan meals a few times a week too.

This is one of my faves. It’s quite filling so we have it with naan or chipatti instead of rice

I realise some of mine aren’t vegan, but you can add vegan cheese if you like...

I really like Anita Bean's book - the Vegetarian Athlete (even if like me you are neither of these things). I have found the recipes, simple, healthy and tasty and this book has given me lots of inspiration as someone fairly inexperienced with vegetarian cooking.

Have a look at cooking on a bootstrap. Jack is vegan and lots of her recipes are too. Budget friendly too.
