I did a red onion and mature cheddar one that went down really well.

Another favourite is goats cheese and roasted peppers.

It does have goats cheese but as long as you buy the soft log type without the rind it's completely fine to eat during pregnancy :)

Trick is to make sure the onions are really caramelised and use a very mature cheddar.

Sarah Brown has a recipe that looks very colourful as well as tasting good - it’s called Mexican croustade, if I remember correctly, and has avocado, orange, yam and kidney beans in it, so rings of green, orange and purple.

Any cheese that uses rennet from calves stomachs to curdle the milk, is unacceptable to vegetarians. And obviously all cheese is a no go for vegans (apart from cheese substitutes made from soy etc).
Sadly, all Parmesan has to contain rennet to qualify for protected status as a regional delicacy product.
