Vegetarian Christmas Lunch recipes please

I turned veggie this year and this Christmas will be my first veggie Christmas.

I can do a veggie version of all the trimmings but I'm looking for a recipe as a Christmas centrepiece. It will be for 10 people.

As it'll be a new recipe for me, I'm asking for recipes now so I can practice before the big day.

Nut roast? Don't have a specific recipe but I had it once as had already ate 2 turkey lunches that week and it was really tasty.

The Delia parsnip roulade is amazing. I usually do it with cranberry sauce instead of parsnip, but it’s delic both ways. It’s doable the day before too. You might want to do two if it’s for 10 people.

I hope you are warning your other guests!! I can imagine some people would not be pleased!

My dd is veggie so she will be having her own veggie nut roast/stuffing/gravy etc but I will be cooking meat for everyone else.

I made 12 of these www.bbcgoodfood.com/recipes/12804/melty-mushroom-wellingtons by simply multiplying the recipe. I made them a few days before and froze. They were easy and tasty.

I make this every Christmas and have with the usual trimmings - roasted potatoes, brussel sprouts etc & veggie gravy. Even the meat eaters love it.

@TeaByTheSeaside A sheet of puff pastry, i roll it out a little bit thinner. Then a layer of mushroom risotto - make sure it's cool or it will soften the pastry. I use the Pronto Risotto. Then stir fry some vegetables in a little oil. Broccoli, mushroom, red onion, red & green pepper. I also add some fresh garlic and green chilli for a bit of a kick. Don't over cook leave it al denté. Let cool and place on Risotto. Roll up the pastry fold up in the sides and make sure it's all sealed. Score it and add any pastry decor. Brush with milk and bake in oven. About 180°C for 40 - 50 mins and it's a nice golden brown. Smile

This is a nut free roast. It's very tasty and can be made in advance and heated up. My kids love it as they hate nuts and also pastry!
