How to Cheat at Risotto

CoralFish · 24/10/2018 13:00

Okay, so I know nothing will beat standing over the pan, slowly adding the stock and constantly stirring, but I want to find a good 'cheat' alternative for easy week night meal.

I wondered if anyone had tried any of the following:

  1. 'Baked' risotto where you stick it in the oven with all the stock and leave it
  2. Making it in a rice cooker
  3. Making it in a slow cooker
  4. Making it in a paddle-type hot air fryer

Any feedback on any of the above methods would be most welcome!

Definitely a yes to baked! Far more successful than any I've ever tried on the hob...

naked risotto, but it lacked the creepiness

Best autocorrect ever.

And do not stir risotto constantly. Only occasionally. Otherwise you end up with wallpaper paste.

Instant pot 5 minutes

Easiest way ever if you are really stuck for time:

Microwave rice
Tin of soup
Add a bit of cooked protein, poss some peas
Heat & stir
Sprinkle with Parmesan

My favourites are lobster bisque with seafood and mushroom soup with chicken

Is it as good as from scratch? No
Is it bloody lovely in 5 mins flat? Yes!
