Just as the title says. Just made soup. It's not good. Very 'meh'. I need some good recipes. I like cooking so they don't have to be super simple but they have to be delicious!!

Buy a veg pack from tesco - usually £1.00. It will have onions, parsnips, carrots and a swede. Peel, season (salt, paprika, garlic pepper) and boil (in just enough water to cover). When cooked, and most of the water is boiled off, blend the vegetables. A stick blender is fine, but a magic bullet is much better. This way you can blend just the veg, and decide how much of the water you need to add back in to get the right consistency.

The secret is in the blending! You can do carrots on their own and it would also be delicious! Sweet potato and broccoli is yummy - anything really!

This may be too simple, but it’s yummy and filling:

  • half a packet of soup mix (about 250g) , soaked overnight
  • an onion, chopped
  • a leek, chopped
  • two carrots, chopped
  • 2 sticks of celery, chopped, plus the leaves front he middle
  • a bay leaf
  • a blob (maybe 2 or 3 tbspn) of tomato purée
  • good vegetable stock (I use Bouillon), about 1.5 to 2 litres

Put in slow cooker, bubble all day, serve with nice bread.

Fry an onion in som evil.
Add a tin of tomatoes.
Half fill the tin with red lentils and add those.
Rinse the tin to shift all the lentils that have stuck and add that too.
Add a dessertspoonful of pesto and some oregano and some stock. I use either a tiny bit of venom, like a quarter to half a teaspoon or a sprinkle of marigold low salt.
Cook. Once the lentils have softened you have tomato lentil soup. You might need a bit more liquid. You can add a carrot and/or some celery with the onion.

Fry an onion with a carrot or two, a stick or two of celery finely chopped and some herbs. Add some chicken. Thigh meat is best. Add some diced potatoes. Put in half a chicken stock cube and add water to just cover. Cook until it’s cooked. Chicken and vegetable soup.

Add more stock to suit, I’m cooking for toddlers so try to keep the salt lower.

Fry an onion (are you spotting a theme?) with a thickly chopped carrot or two. Throw in a bunch of red lentils, maybe three or four handfuls? Put in half a stock cube, I have been successfully using a ham one. Cover with water. Cook. Lentil soup. You might need more water. Keep an eye on it cos lentils are bastards and like to attach themselves to the bottom of the pan and burn.

couple of bags of pre-cooked soup or stew packets of vegetables.
Extra onion, extra garlic, a grated carrot couple of handfuls of red lentils, some pearl barley, stick of celery chopped. Water to cover, and a couple of stock cubes, maybe even 3

2 leeks, chopped.
1 clove garlic, crushed
2 large potatoes, peeled and diced.
2 pints chicken stock.

Fry the chopped leeks and garlic in a little butter for about 10 minutes. Add the potatoes, stock and salt and pepper to taste. Bring to the boil and simmer for about 20 minutes or until potatoes are very soft. Blend and stir in a glug of single cream.

3 large onions, very finely sliced
1 clove garlic, crushed
1 pint beef stock
1 desertspoon of plain flour.

Fry the onions in butter and olive oil until transparent. Stir in the flour and cook for a couple of minutes then stir in the stock and garlic. Simmer for about an hour. Serve with cheese croutons.

Moroccan Harira soup (almost like minestrone)

1 teaspoon ground cinnamon
1 tablespoon ground ginger
1 1/2 teaspoons pepper
Salt to taste
(beef stockcube I’f you like)
1/2 teaspoon turmeric
1 generous handful each Parsely and Corriander
1 or 2 stalk celery with leaves
1 large onion
1 tin chickpeas
handful lentils
handful broken vermiceli / soup pasta
6 large tomatoes (peeled, seeded and pureed) OR a tin

APART FROM THE CHICKPEAS, LENTILS AND VERMICELLI put everything in a blender or stick blend

Transfer to a big pot, top up with water about 1.5 liter, add lentils and Bring to boil. let simmer for around an hour, add chickpeas and vermicelli.
Then thicken with 1tbsp plain flour mixed in with one cup water

Cook for further 20mins stirring frequently as it tends to catch unless it’s non stick

Serve with a squeeze of lemon

my husbands Moroccan and Wolfe’s this down like he does at “home”

Exactly Bingergeer's recipe but add chicken, chopped chorizo and paprika, dash of Worcestershire sauce, dash or lemon juice and a dollop of honey. Lots of black pepper. Do not blend. Best chicken soup ever.

Cauli cheese soup in winter is actually all I eat. It’s like a hug in a bowl.

Fry an onion and some garlic until soft. Finely chop a head of cauliflower (or whizz in food processor) and fry gently until slightly softened. Pour in hot chicken/veg stock until the cauli is just covered and simmer till soft.
Blend with stick blender. If slightly thin then thicken up with a cornflour slurry.
Take off heat, stir through a big spoon of creme fraiche and tons of mature cheddar. Season with salt and loads of black pepper. Absolutely delicious!

It freezes well, just heat it v gently to prevent splitting and don’t boil it.

Easy sweet potato soup 🍠

Fry a large onion and 5 cloves of garlic in some butter in the bottom of a big pot

Add 3 roughly chopped sweet potatoes and about the same volume of chopped potatoes

Add hot water until the veg is only just covered, and stir in a spoonful of bovril

Cook it until the potatoes are soft then blend it all together until smooth

Serve with a dollop of natural yogurt or sour cream

teabag I was going to link but the Tesco app just keeps opening every time I try. Google soup mix tesco and you’ll get it - it’s a mix of lentils, barley, split peas etc. Very healthy and filling (and cheap!). It makes for a solid sort of soup that can be lunch on its own, or supper with bread and maybe cheese or ham.

My new favorite :

Roasting tin with little oil, garlic and herbs. Add chopped red peppers, onions, pickled onions, butternut squash and carrot. Roast for an hour on gas number 6. Add to a pan of water with vegetable gravy granules/stock cube, salt, pepper and a little chilli powder. Boil and simmer for an hour then blitz.

Delicious!
