Small slow cooker meals

I only cook for myself so at most need 2 meals (one to eat, one for next day) as i have a tiny freezer.

I made beef casserole last week and it was delicious and easy so does anyone have any slow cooker recipes that are cheap/few ingredients and can make 2 or 3 portions?

Beef, onions, carrots and any veg you fancy. I chuck in half a bottle of red wine and leave in low all day. Comes out lovely. Can also do the same with beer.

Sounds lovely. Is it just half the bottle of wine no other stock or water etc?

Two chicken thighs, a few bits of root veg, some stock, herbs, flavourings like garlic, spices etc, and just shove it on for the day.

I like this with new potatoes, and eat most of the veg and half of the chicken on day 1.

Day 2, it's just the chicken and some sauce left. I use this to make a risotto, or I'll cook some pasta, reheat the sauce with the shredded chicken in it, and maybe add a few more fresh herbs and then stir them both together. It's a thinner sauce than you're used to with pasta, but you could thicken it if you preferred, or stir in a wee bit of cream and maybe some mushrooms to make it a bit more luxurious.

I just chuck the wine in - would put a bit of water in if it looked too dry but it never has as the slow cooker seems to seal in the moisture as long as you don't keep opening the lid.

and yes drinking the other half of the bottle is a plus!!
