What would you cook as a main if you had vegetarian guests?

I always go for meat at dinner parties but need to rethink. Am really stumped for veggie ideas that aren't pasta or curry. Any ideas for something a bit special (but not too time consuming)? Tia!

www.bbcgoodfood.com/recipes/4540/crispy-greekstyle-pie- This is nice. I usually speed the bottom of the pie with red pesto before I fill it for some extra flavour. Serve with a big salad and lemon Cous cous.

Veggie feijoada - we have this regularly and it's yummy! (Not vegetarians but try to be meat free a few nights a week.)

Vegetable lasagne with garlic bread!! My fav!! If they're ok with Quorn substitute you can do a Quorn lasagne which is actually very very close to the original meat version, some veggies prefer not to have alternatives in that case you can use veggies x

Spanakopita is dead easy if you buy ready made filo pastry. Handfuls of dill and parsley really flavour up the spinach, and the eggs and feta cheese provide plenty of protein. Assuming your guests aren’t vegan, of course - always more tricky to cater for those!

I know you said not pasta, but providing you have veggies and not vegans Mushroom Lasagne is really lovely

I have a wonderful little cookbook called the Sunday Night Book by Rosie Sykes - there is a sumptuous spiced butter bean stew in it that I made for friends for a dinner party. It's more special than just a soup as you also put out bowls of fresh coriander, feta, avocado, and crumbled tortilla chips to add to your meal as you wish, like doing taco night but much less messy and a bit different than the old chilli non carne!

I've done the BBC greek pie lots of times.
If you want to make it in advance, bake it, then fridge or freeze it.
Reheat from thawed, it's more crispy when it's baked twice

I really love a butternut squash risotto, and everyone I've made it for has loved it too.

I like to top it with toasted pine nuts.

If I crave meat with it I'll either do some pancetta to sprinkle through or roast a chicken.

Homemade Pizzas & salad:
Potato, onion and rosemary
Butternut squash, sage and feta
Caper, red onion, pine nuts and sultanas
Pear, stilton and rocket
spring veg - like peas & asparagus with basil oil & ricotta

A veggie mezze - although this is quite time consuming because I make at least 5 dishes from scratch...

Sweet tomato and aubergine rigatoni
Puy lentil and feta tart
Goat's cheese, tomato & thyme puff pastry tart with either a salad or boiled new potatoes and green veg.
Smoked butternut chilli.
Lemony beans with rosemary mash

A risotto, is nice but it is unlikely to feel special to a veggie - it's a chef's go to option for veggies.

I recently made an amazing miso aubergine dish:

Cut aubergines in half length ways so you have 2 'boat' type shapes.
Use a knife to cross hatch across the middle part (green bit)
Cover with salt and oil and bake in oven for 45 mins.
Take out and cover with marinade made with equal parts: honey, soy sauce, white miso paste.
Put back in for 20 mins.

Serve with stir fry rice, or some noodles and a little zesty cucumber salad or asian slaw.
