Veggie stew/casserole with dumplings

Does anyone have a good recipe?

Do you need a recipe for this? How many are you cooking for? Choose veg you like, fry onions (and garlic if using). I would also partly fry carrots and celery and other hard vegetables. Add in softer ones, courgette, aubergine (do people still salt these?), peppers, mushrooms. Then a tin of tomatoes, a bit of water or veg stock, mixed herbs, cook on the hob or in the oven for 20 mins or so. Make dumplings with Atora veg suet or whatever, add to the pan, cook for 20 mins; that's it! You need a fairly wide pan if you are cooking 8 dumplings.The dumplings will absorb some of the liquid.
