Can drained chickpeas in blender. Keep some chickpea water for
Later. Clove garlic crushed in. Good dollop (tablespoon or two) tahini* in. Squeeze lemon juice in (I use juice from half a lemon per can c peas). Blitz. Add small amounts of chickpea water if you want it looser. Into bowl. I top with olive oil and hot smoked paprika. Sometimes with toasted pinenuts.
*If you have sesame seeds to make tahini (sesame paste) I’ve never done this. AlwYs use ready made - tahini.

Tbh I’d never considered making tahini (it’s quite thick and oily and couldn’t imagine making it). Just googled and now think I may give it a go. Careful though as lots of recipes are for ‘tahini sauce’ etc. Different from thick tahini. Do think you’ll need a lot of sesame seeds? Good luck.

Chuck a few ice cubes in when you blend it. This gives you a smoother texture.

Make sure you keep your chick pea water aka aquafaba to make lovely meringues with too Smile
