How shall i have chicken for tea

Hello,

I've got chicken breasts that need eating today but not sure what to with them.

DH isn't eating rice or pasta at the moment and all I can think of is roasted chicken and potatoes but it's a bit dull.

Anyone have any non carb ideas

I like them stuffed with cream cheese and herbs and wrapped in parma ham, poached in a white wine stock.

Or you can stuff them with mini sausages and stuffing.

Or go spicy with a curry / tandoori rub and have Indian accompaniments

Coat in Cajun seasoning wrap in bacon then when cooked melt cheddar cheese over it...then have sweet potatoe fries with them.

Beat them flat and make schnitzel

Roll in tandoori yoghurt and tray bake with cauliflower, peppers, onions

Stuff with mushrooms and make a creamy mustard and white wine sauce (even better if you wrap in puff pastry...)

Put in an ovenproof dish with olive oil, at least one garlic clove (whole) per breast, salt and pepper and any sad looking veg in the fridge eg bits of mushroom, pepper etc. Cover with foil and cook in the oven for about 30 mins. Serve with rice. Looks pale like invalid food but tastes good.

Super annoying page layout, but I made these Honey Dijon Garlic Chicken Breasts the other night and they were very good. I would cut the cooking time a bit next time though - check a bit earlier than he says in the recipe to see if they're done.

Buy a copy of Bird in the Hand by Diana Henry and then you need never question again. Last night we had Mexican chicken with pumpkin and coriander pesto. Totally delicious!
