I've defrosted some chicken breasts - what shall I have for tea? INSPIRE ME!

I've got this sort of stuff in the cupboards:

tomatoes
onions
leeks
mushrooms
parma ham
Flour, eggs and baking stuff
pasta, rice, potatoes, sweet potatoes
ginger, garlic, soy sauce, sesame oil
Lots of herbs and spices

Any suggestions please, I'm so BORED of what we usually have...

stuff the chicken breast with sauted leeks, mushrooms and tomatoes and wrap in parma ham. Serve with potato wedgies made from the sweet potato

MMMmm, the stuffed ones sound good too. Once had chicken breast stuffed with sundried tomatoes, hadn't read menu (training day at work) though, cut open chicken and nearly gagged at 'blood' coming out of it

cut up some onions, tomatoes and mushrooms, place on top of chicken, wrap in parma ham and cook.

or

marinade in ginger, garlic and honey for a few mins.

or

just a chicken salad

I make skinned chicken breasts poached in chicken stock with lemon juice and chives then when chicken is cooked, stir in a little cornflour dissolved in water to thicken the sauce. Pour over the chicken breasts. Serve with rice and veg. Very healthy and (unlike some chicken breast recipes) the chicken is wonderfully moist.

Flatten chicken breasts. Saute garlic, add chicken and brown on both sides. Add canned tomatoes, capers, olives. Cook chicken through and you're done. Favorite at our house. Good with turkey too.

It is very simple and very low fat. We have been having it once a week as part of our diet. Have almost lost a stone in the past 7 weeks.

bit similar to to nbq, but I do chicken breasts, flattened, sliced open and stuff mushrooms into them. Stuck in loads of garlic butter, then squeeze lemon juice in. Wrap in parma ham, drizzle lemon juice over the lot, sprinkle on parsley and bake.

or how about chicken and leek pie? saute the leeks, add the chicken, brown it. Pour in a pint of stock, msot of a tub of philly and a tbsp of grain mustard and some asparagus if you have it. Simmer until chicken is cooked, add tin sweetcorn. Put in dishes, cover with puff pastry and bake.

If you also have grapes, you could
chop chicken into small pieces, fry with a little oil, add chopped onion, add some flour, add chicken stock, tsp of mustard, tbsps soya sauce, simmer for 15 minutes, add halved or whole grapes, simmer for 5 minutes. Serve with rice and vegetable/salad.
