Walnut recipes

Autumn is here and the walnuts from our tree are littering the garden. I collect them every year then don't get around to using them. Anyone got any good recipes?

This thread is making me extremely hungry - hungry for walnuts. When we stayed in northern Italy a couple of years ago we had pansoti with walnuts gorgonzola, it was beautiful. I agree they are underrated. Some fab ideas on here.
