Spinach, mushroom and pesto lasagne receipe. Yummy.

Made this yesterday and it was very nice;

Ingerdients;

500g spinach
40g butter
40g plain flour
300ml milk
1/2 tsp nutmeg
150ml veg stock
75g grated fresh parmesan
green pesto
fresh lasagne sheets

Put the spinach in a colinder in the sink and pour boiling water over. Leave to wilt and cool. Then roughly chop up with scissors, squeee water out.

Fry the mushrooms in a little butter until golden.

Melt the 40g of butter in a saucepan, add the flour. Stir and turn heat down. Add milk and stock, keep stirring. Add nutmeg and 50g of the parmesan.

In a lasagne dish put a layer of spinach. Then mushrooms. Then a layer of the sauce, then a few tablespoons of pesto blobbed about. Coevr with lasagne sheets. Repeat. Finish with white sauce and a few blobs of pesto.

Sprinkle over the rest of the parmesan. Bit of black pepper.

Takes about 25mins at 180 in a non fan oven.
250g chestnut mushrooms. Or 160 for a fan oven.

that sounds delicious! DH doesn't like mushrooms though. wonder what i could replace them with?

hmmmm there is an annabel karmel recipe I use for spinach and tomato lasagne its lovely too.

Sophable - I used flora light rather than butter and it seemed ok. So that helps a bit. The only high fat thing is the cheese and there didn't seem to be too much of the sauce really. Oh, I suppose pesto is high fat...just don't put a lot in, a little goes a long way.
