what to do w ith left over roast chicken?

just make a white sauce, fry some onions and galirc (and mushrooms if you like) stir in the cold chicken and heat through for a while to ensure piping hot.

Beet - if you did this and added some raisins and curry powder you would have an 'english' curry (school dinner style!)

this looks nice and you could do it and then just add the ready cooked chicken at the end to heat through.

for thai curry - i have jars of ready prepared lime leaves and galangal (waitrose)so i blitz them with some lemongrass, coriander, chillis, a little oil and add to chicken in pan. add tin coconut milk.

or normal storecupboard curry : jar patak sauce (hot/mild as you like); tin tomatoes; tin coconut milk. add veg/meat/prawns.

serve both with plenty basmati rice and chutneys. also tomato/onion/mango salsa quite nice.

thai curry

2 tablespoons of curry paste (we get ours from the local thai place, v authentic, ahhhhhh Bangkok revisited)
1 tablespoon of brown sugar

heat in small amount of oil in pan until sugar melts and wonderous aromas emerge

put in chicken and aubergine cut into small cubes

tin of coconut milk

simmmer for 30 mins (or until aubergine is soft)

splash of fish sauce, tons of corriander

serve
