This is the one I do, I don't add salt just herbs and pepper as we give to our DD

Slice an aubergine, drizzle with oil and put in oven until soft.

In a pan, gently fry a chopped onion and some garlic until soft add lamb mince, whne mince cooked add tin of tomatoes and some tomato puree and herbs, whatever you want,

Slcie some potatoes and boil til just cooked.

Make a white sauce

In a dish lauer the mince in then aubergines, then potatoes and cover with white sauce and a bit of grated cheese, cook in oven until golden and enjoy

The Dinner Lady book has a good child friendly one using pots instead of aubergine. CAT me if you want it - I have it in a pdf file but can't seem to cut and paste the text.
Basicaly layers of lamb mince with onion and herbs, sliced pots and cheese sauce. I always add a bit of extra cinnamon

I second the dinner lady one. My kids adore it and it's really quick and easy to make. I'm afraid there's never enough to go round as they always have seconds!!
