Ds birthday on Friday evening. How far in advance can I make the sponges? I don’t have a tin, only a cake stand and lid. Can I wrap it in foil/clingfilm?

A chocolate fudge cake will keep beautifully moist for a few days. Making it tomorrow would be no problem.

Sponge freezes well. You could make it, freeze the sponges, and then ice on Fri. It's also easier to ice a frozen sponge as fewer crumbs end up getting mixed in to the icing as you spread it

If I freeze It do i just leave it to defrost on the side? X

I would ice it frozen first and yes then leave it to defrost on the side

To clarify: I mean freeze the sponges Un-iced, then take them out, ice them and leave to defrost.
