Veggie dish to go with roast chicken

We’ve got friends coming for lunch, one of which is veggie. Any ideas on a veggie dish to cook to go with roast chicken? Something that the meat eaters can have as a side dish, but special enough to be the main bit of the veggie meal.

If you don't fancy cooking something extra, I'd do your chicken and vegetables as normal and cook something to replace the chicken - either a nut roast (Tesco do some called nut cutlets that I love and they go well with cranberry sauce) or something like a Veggie shepherds pie (Sainsbury's do a lentil veg pie which is amaaaazzzing) and then serve with all the same veggies as everyone else. 🙂

Cauliflower cheese, goes lovely with a roast and substantial enough to feed the vegetarian.

Ratattouie, serve as side dish and add some crumbled feta on top for the vegetarian.

I’m not sure about your thinking here. Won’t the vegetarian end up with a plate full of side dishes and nothing as the “main”?

I’d do a pie. Spinach and ricotta filo ones are really easy.
