What can I do with leftover mince and rice?

I made stuffed peppers yesterday and there’s a lot of the filling left over. I cooked it all together though, just poured the extra mince/rice around the peppers in the tray if that makes sense.

It’s got chopped tomatoes, onion and garlic in it, seasoned with cayenne, paprika and cumin (salt and pepper too obv) so need some meal ideas to suit that flavour.

All I can think of is keema but I don’t really fancy that today.

Add kidney beans, and you have a chilli.

...2 out of 3 replies then suggest keema... Grin

I'd probably knock up some kind of mince fried rice, but maybe do it pattaya style, which is essentially wrapping the whole lot in a thin omelette.

Enchilladas
Wrap up in wraps maybe with some peppers or other veg and sprinkle with cheese before grilling.

ArtemisWeatherwax 😂😂😂 I was so confused, I was thinking where does mince come into this?!

Thanks everyone, there’s quite a bit left over (bit of an overkill on my part) so might be enough for more than one of these suggestions!

I'd probably add more smoked paprika and chilli powder and serve with potato wedges, maybe with some cheese.

Stuff something else, marrow, squash or aubergine or large tomatoes.

Use as a filling for pancakes, fill, roll up and put in a dish, cover with cheese sauce, bake till bubbling.

Use to fill cannelloni, bake as above with cheese sauce.

Stir in some pasta, quills or bows etc, or some gnocchi and bake.

Make a cottage pie or top baked potatoes.
