If you have a muffin recipe (the cakey-kind!) that tastes great and is tried and tested, then please let me know it! My recipes just seem to be boring and not very tasty I have seen lots of recipes, but want one that someone can vouch for, thank you!!!

I have a small cake (bun size receipe;
8 oz self raising flour, 80z sugar, 8 oz butter, 4 egss. Mix suar and butter to a cream. add 3 oz of flour - mix, and 1 egg - mix, 2 oz flour - mix, 1 egg etc alternating until all has gone, perfect victoria sponge plain cakes every time 180c gas mark 4 before. Just don't open the oven door to much. I always put fruit in mine about 3 oz, any other extras you put in must not weigh more than 3 oz. Combos I have used are carrot and orange peel, sultana and apple, juice of half a lemon and lemon peel, date and walnut (really tasty) mashed banana, and decadent ones either peanut butter or grated really cold mars bars, if it gets 'dry' beat an egg and add it to the mixture a tiny bit at a time until your mixture has become looser. hope that gives you some ideas

These are fab and have always worked for me:

Chocolate Banana Muffins

For 12 muffins:

225g SR flour
150g caster sugar
1 tsp baking powder
2-3 ripe bananas
100g plain choc chips
175ml milk
75ml sunflower oil
1 egg

Preheat oven to 200 deg C/400 deg F/Gas mark 4

Sift flour and baking powder into a bowl. Add sugar and choc chips

Mash bananas in a seperate bowl then add, along with all remaining ingredients

Mix with a wooden spoon until just combined (it's meant to look lumpy and not like normal cake mixture)

Divide mixture between muffin cases and bake for 15-20 mins unil pale golden brown

Cool on a wire rack. Eat straight away (yum) or keep in airtight container for 2-3 days

I recommend this recipe from Delia Smith's Summer Collection.
