Other ways to use veggie burgers (not as burgers?)

I have a couple of (open) boxes of veggie burgers - Sainsburys and Linda Mccartney. I don’t like them as burgers. The Sains own ones in particular are a bit cardboardy.

I wonder if I cooked and chopped them up could I use them in similar ways to Quorn pieces? I’ve used Quorn pieces in curries, veg pasta mixes etc. If I chopped them up in super-small pieces could they work as pretend mince?

Any other ideas welcome, I just want to use them up but not as the burgers they are😷

Douse them in spicy garlicy tomato sauce, and bake them?

I’ve chopped up meat burgers and made bolognese before. They work as meatballs too. I can’t imagine why this wouldn’t work with a veggie burger, even allowing for texture differences.

I think I’ll give it a go with a few meals and see how they turn out. I’m trying to clear the freezer out of ‘shit I’ll never buy again’, but just keep pushing the burgers to the back.

Try microwaving covered rather than grilling / ovening, they might be less cardboardy as they won't dry out. Layer with a flat mushroom, halloumi, houmous, guacamole, feta, salsa...whatever you like to make a stack.

Or bin them, and find a lovely homemade burger recipe.
