Trout fillet

I've got a trout fillet for OH's dinner tomorrow. Normally I bake it in the oven in a foil parcel, with a lemon slice or two on it, and he does love this.

There must be more to trout than this though. Can anyone suggest anything else to do with it?

You could make a tomato and avocado salsa to go on top. Or confit cherry tomatoes in olive oil and basil, and spoon over.

I also like trout with a quick pan sauce - fry fish, then deglaze the pan with a glass of white wine. Add grain mustard and a spash of cream. Nice with fried potatoes, onions and kale!

Thank you. II showed him these ideas and he asked for it to be done the usual way. Says he loves the trout so much, he wants to taste just trout. I will, however, use that salsa idea on salmon for himhim one day, it looks tasty.
