I need a stuffing recipe without breadcrumbs for gluten free guest!

He can't have gluten or dairy and is coming for Sunday lunch. I have found gluten free gravy but given up on Yorkshire pudding!

Anyone got any

a) great stuffing recipes that don't need breadcrumbs?

b) nice veg dishes - something a bit fancy that doesn't involve gluten or dairy? We always have leeks in cheese but that's definitely out!

Could you substitute cooked rice for the breadcrumbs? Or use chestnut or coconut flour?

Buy a gluten free loaf and use that for bread crumbs.
Pretty sure you can buy ready-made gluten free Yorkies too.

Use ground almonds instead of breadcrumbs. Use them mixed with GF oats etc too for crumbles. 🍽

Gf Yorkshire puds are so easy to make and you could make them dairy free too. They do packets of stuffing but not sure if dairy free, don't have one to check. Morrison's and asda do them, probably Tesco. I do leeks/cauliflower cheese with gluten free flour, almond milk (unsweetened) would be nice I'm sure.

Veg dish

Mashed potato and parsnips with garlic and ginger.

Put the potatoes and parsnips in a pan of boiling salted water, add a clove of garlic (peeled).

Once cooked mash or use a ricer/stick blender, add a bit of almond or soya milk and 'season' with grated ginger.

Carrots roasted with honey. (Actually works with any root veg) just add a decent dollop of honey to the cooking fat.

Small bundles of veg, one carrot baton, one asparagus spear, one baby corn, wrap in a bundle using spring onion to tie and steam.

Cauliflower 'steak' - cut a large slice of cauliflower and fry as you would a steak.

Isabels yorkshire pudding mix is great and dairy free.

I really like braised red cabbage

M&S have ready made gluten free stuffing

Savoy cabbage or chopped Brussels sprouts with bacon: blanch them for a minute or two, drain, then fry up a few chopped rashers of bacon in oil then add the veg and fry until cooked but still with a little bite.
