Tray bakes - we like sausages, potatoes, onions, carrots, cherry toms - sometimes do peppers or sweet potatoes in addition or as replacements. Bit of oil, slug of balsamic and some salt and pepper.

The above works just as well with chicken
Chicken wrapped in prosciutto and done in the george foreman/grill, goes well with loads of different sides, we had this the other night with leeks and chips (using stuff up from the freezer!)
Fry chopped up bacon in a pan, add shredded leeks and cabbage and soften. Stir in some soft cheese and possibly some pasta water. Stir through cooked spaghetti.
Also risotto and shakshuka as mentioned above - both of these are particularly good for store cupboard/long fridge life ingredients.
Sometimes we have breakfast wraps/burritos - either bacon or chorizo, scrambled egg, avocado, corn, onions, cheese, roasted peppers - some combination of these in wraps.
