Im looking for new ideas, ideally for one pot type dishes that I can make on a friday evening, put in the fridge and heat and serve within 20mins once home.

We have a few weekends coming up where this would be helpful. Friday evening we have plenty of time to prep or leave something cooking hours, but the Saturday we need to leave 8a, return 8pm ish. Each time we will be picking up visiting family from the local airport on our route back (2 hours away).

So would love some ideas of something, warm and tasty we can just pop in the oven or on hob to heat when we arrive back, so by the time we have all settled back, unpacked car, shown guests around etc we can just eat after a long day.

We usually do Goulash as our go to, but these guests have already had this twice on arrival now. I could do with around 5 dishes to alternate each month.

No fish
Suitable for 4-6 people
Ideally, ingredients seasonally as hard to get out of season, ie Strawberries can no longer be bought here, only May-August.

Bit more work, but spaghetti bolognese sauce heats up well, and would just need the pasta cooking.

What about a lamb or chicken casserole as an alternative to the goulash? Maybe beef and ale - you can also make this into pie, by heating the stew on the hob, and putting precut frozen pastry squared in the oven, then just serve stew with a square/disk of pastry ontop, even tho they are cooked separately! Chicken, bacon and leak casserole/pie?

What about a thick soup (with lentils in?) and then a pudding that can sit in the oven a bit longer like a fruit crumble?

Shepherds/cottage pie
Beef stew/casserole
I know none of it is very unusual or exciting but it would all work well for what you want

Slow cooker

Prep Friday and leave in the fridge overnight then set to low on Saturday

Pulled pork, baps and salad
Beef or lamb stew
Chilli concarnie
Vegetable soup
Chicken curry

I have been thinking along these lines lately & will research slow cooker recipes. DH made an absolutely gorgeous chicken, chorizo & olives stew ( on BBC Good Food). You can have it with crusty bread but if I remember I did rice with it.
