Now winter is on its way the slow cooker is going to be coming out more & more. I've got a few recipes that I like but looking for some new ones...?

Cajun chicken stew is great in slow cooker. Boneless chicken thighs, red and white onions, red and green peppers, tinned tomatoes, chicken stock pot, garlic, pepper and a good helping of cajun spice mix. All thrown in on low. It’s very simple/basic but loved by everyone here...we eat it with crusty rolls or rice.

'goulash' - not proper traditional Hungarian style, but the way my mum used otmake it - it's lovely.
500g stewing beef cubed and tossed in seasoned cornflour
6 peeled, halved shallots
1 stick celery very finely minced
2 large carrots, peeled and cut into chunks
2 large red peppers, de-seeded and cut into chunky slices
tin of chopped tomatoes
1 heaped tbspoon of sweet smoky paprika
1 tbspn of garlic puree
1/2 tsp cumin
1/2 tsp of chilli or cayenne powder
black pepper and salt
1/4 pint of beef stock
bayleaf

put them all in together and slow cook all day while you're at work.
Serve with a dollop of sour cream on mash, rice or potato noodles

Probably cheating but these are lovely!

There’s a vegetarian recipe and lamb recipe in the box and we enjoy both Smile
